Harry's Ripe Olive Dip

What the heck is ripe olive dip?

I actually got this from so friends in the 70's and added my own touch to it. It wasn't very hot but it actually got me started loving spicy hot food.

 

As the name suggests it’s a dip that has rip olives as one of the main ingredients. It's not very fattening in itself since the only thing that it has that has any fat at all is olive oil., but we all know that's good for you.

Ingredients

Here's what you will need. This is a small batch but can be multiplied for the size you want..

  • 1 12 oz can black whole or chopped olives
  • 1 4 oz can of chopped green chilies
  • 1 bunch of fresh green onions
  • 2 tomatoes
  • 2 T of a good olive oil of your choice
  • 1 T of a red wine vinegar
  • As many pickled jalapenos as you can stand
  • 1 T garlic powder

 

Preparation

Chop everything up in as small of pieces as possible. About a 1/4 in. After that mix them all together and add the olive oil, vinegar and garlic powder. Mix it well and add salt to taste. Cover, put it in the frig and let it sit for at least a couple of hours and overnight if possible. It gets better the longer it marinates.
